About Us

Fermented foods have been in my family for as long as anyone can remember. It sat at the center of every table, every gathering, every season of life made by hand, never measured, always from the heart.

When I moved to Colorado, I brought my family’s kimchi recipe with me. I also fell in love with the land here: the farms, the farmers, the love people take in growing things the right way. It felt natural to bring both worlds together.

Ginkgo & Co. is built on a simple belief, passed down long before it had a name: food is medicine. Every vegetable, every herb, every ferment is chosen not just for flavor but for what it gives back to the body. This is the same wisdom that shaped Korean kitchens for generations, now grown in Colorado soil.

Ginkgo & Co. is what happens when a generations-old family recipe meets Colorado soil and a community that believes in doing things with intention. Every batch is handcrafted, fermented with love, and made with ingredients we know the story behind.
